Thailand doesn't really go to bed when the sun goes down.In a lot of places, evening is actually when things pick up. Food stalls start appearing, markets fill in, families head out for dinner, and travelers start scouting around for somewhere to eat.

If you're planning a Thailand trip, nights are worth building into the itinerary properly — not just treating them as the gap between dinner and bedtime.

Night markets are probably the easiest way to get a taste of Thailand after dark.

Some are huge, packed with food stalls, clothes, souvenirs, little shops selling all sorts. Others are way more low-key and basically just about the food.

Honestly the best approach is very simple: walk around first before you decide on anything. I do not need to grab the thing that catches my eye. I look at what people're actually lining up to find a stall that is busy and try something I do not recognize. There is plenty for people who would rather skip that scene entirely. A late dinner, a rooftop with a view, an evening river cruise or just wandering through a neighborhood can be more than enough.
