I'm picky about two things, my drinks and my seafood. Finding both in one spot, without bouncing around town, is harder than it should be. A friend asked me about it last week, I went on way too long, so I'm writing it down once and done.
I Check the Bar Before I Check the Menu
Walk in, look at the bar. If the bartenders look bored or the bottles are dusty, I already know how the night's going. A good drinks spot should feel like somewhere people want to sit, not a counter shoved in a corner. The first drink sets the mood for everything after it, and I remember it longer than I remember the appetizer.
Why Seafood Restaurants in Houston Have It Easy

We're close to the Gulf. That's the whole advantage. Seafood restaurants in Houston should be able to serve fish that tastes fresh and light, not tired, and when a place gets it right you notice on the first bite. When they get it wrong in a city this close to the water, I just don't go back. No second chances for fish.
The Room Matters More Than People Admit
A big curved bar in the middle of the room feels different from one pushed against a wall. It's good for a solo drink, a first date, or waiting on the friend who's late every time. On weekends there's live music in the lounge, loud enough to feel alive, quiet enough that you're not yelling. I'd rather sit there than at a table most nights.
Infused Spirits Actually Taste Different
I used to roll my eyes at "house-infused." It sounded like marketing. Then I had a drink made with in-house infused spirits and, fine, it tasted deeper and more layered, less like sugar and booze. It's extra work for the bar team, so when somebody bothers, I figure they care about other stuff too. The Roasted Pecan Old Fashioned is the one people bring up, nutty and smooth, and I'm not even a whiskey person.
Simple Fish Dishes Tell You the Truth

Fancy sauces can cover a lot of mistakes. Roasted branzino with herbs can't. Neither can yellowtail crudo, which is basically cold fish and a few bright flavors. When a kitchen nails the simple stuff, I relax. When it doesn't, I've paid for that lesson before, and it wasn't cheap.
Pair Light Drinks With Light Food
Took me a while to figure this one out. A heavy smoky cocktail runs over delicate fish. Something crisp with citrus works better, and the Emerald Margarita, with tequila, lime and agave, goes surprisingly well with raw fish. Save the old fashioned for steak, or for sitting at the bar before dinner. Sounds fussy but you'll taste it the first time you try.
Happy Hour Is the Cheap Way to Test a Place
If you're unsure about a restaurant, go early. Signature cocktail bars in Houston are half price, beer is $2 off, and wine by the glass is $3 off, mostly in the 3 to 6 window. The wider social hour runs to about 7, Tuesday through Sunday. You get a feel for the room without a huge bill. Times shift sometimes, so check before you drive over.
Small Plates Can Be the Whole Dinner

You don't have to order a giant entree. Skillet bread with chimichurri and Grana Padano goes first, always, usually before anyone's settled in. Then fried okra with Old Bay, fingerling bravas, cauliflower hummus with pistachios, or a simple tomato pizza. Share four or five between two people and you're full, and your wallet is fine.
A Wine Room and a Menu for Everyone
Behind glass there's a wine room holding over 1,400 bottles, which is a little show on its own. I know almost nothing about wine, so I ask the staff what goes with what I'm eating, and nobody's made me feel dumb yet. And if somebody in your group doesn't want fish, there's steak that's hand-cut, dry aged in-house, and cooked over wood and coal. Also lamb chops, a Kurobuta pork chop, charcoal roasted chicken, and a griddle cheeseburger with fries.
The Annoying Practical Stuff
Weekends fill up fast, so book ahead if you're coming with more than two people. Weeknights are calmer and you can actually hear whoever you came with. Brunch runs 11 to 3 on Saturday and Sunday, with mimosa and bloody mary flights, which is a dangerous idea before noon. And it's closed Mondays. I learned that at a different restaurant once, standing outside at 6 p.m., hungry and embarrassed.
So, Go
You don't need a big plan for a night out you'll remember. Good drinks, fish that tastes fresh, a room where you can relax, and a deal if you go early. That's about all I want. If you'd like to see how that comes together, Fielding's Steak is at 3750 Westheimer Road in River Oaks. Come by for happy hour, stay for dinner if you feel like it, and book a table online first on weekends, because it fills up quick.
FAQs
What should I order if I want seafood at a steakhouse? The roasted branzino with herbs and the yellowtail crudo are both solid. They're lighter than the steak side of the menu but still feel like a proper dinner.
What drink goes best with fish? Something crisp and bright usually works better than anything heavy or smoky. The Emerald Margarita is a good pick for raw fish.
Is happy hour worth it? Usually, yes. Half-price cocktails and cheaper beer and wine make it an easy way to try a place without paying for a full dinner.
Do I need a reservation? For weekend dinner or brunch, definitely. Weeknights and happy hour are easier, but booking helps with bigger groups.
